    最初からものすごく辛くする必要はありません。

    煮詰めると味が濃くなるため、最初は少し薄いくらいでも大丈夫です。


    3. 餅とオムクを入れて煮込む

    ソースが沸いてきたら餅を入れます。

    少し煮たところで食べやすく切ったオムクを加えます。

    中火程度で煮込みながら、ときどき混ぜてください。

    餅のでんぷんが出てくると、サラサラだったソースが少しずつ濃厚になります。

    トッポッキは「煮詰める」ことでおいしくなります。

    ただし煮込みすぎると餅が柔らかくなりすぎるので注意してください。


    4. 長ネギとゆで卵を入れる

    仕上げに長ネギとゆで卵を加えます。

    長ネギの香りが入ると、一気に韓国の屋台らしい味になります。

    そして、ゆで卵。

    これは単なるトッピングではありません。

    あとで重要な役割があります。

    餅と一緒に食べてもいいし、オムクにソースと黄身を絡めてもおいしい。

    辛い料理が少し苦手な人にもおすすめです。


    オムクは絶対に入れたほうがいい?

    必須ではありません。

    でも、本場の屋台の雰囲気を出したいならおすすめします。

    韓国のオムクは魚のすり身を使った練り物で、日本のさつま揚げに少し似ています。

    トッポッキのソースを吸ったオムクは、餅とはまったく違う食感。

    そしてオムクからも旨みが出るため、ソースがおいしくなります。


    韓国では天ぷらをトッポッキソースにつける!

    튀김(ティギム/韓国式揚げ物)をトッポッキのソースにつける。

    トッポッキ+キンパ+オムク

    のようにいくつかの料理を一緒に注文することも珍しくありません。

    だからトッポッキは、一皿だけで完結する料理というより、いろいろな韓国の軽食と一緒に楽しめる料理でもあります。


    トッポッキが辛すぎたらどうする?

    「韓国のトッポッキを食べてみたいけど辛いものが苦手」

    という人もいるでしょう。

    そんなときは、
